Recipe | Vegan Breakfast Chorizo

Happy Tuesday friends!

I didn’t want to forget to share a super simple breakfast recipe with you all!

This meal is Vegan, Hearty, and filled with two kinds of Potatoes 🥔 .

It is also highly approved by my boyfriend (that isn’t vegan), and has become his favorite breakfast! 😉

Here’s what you need:

  • 1 and 1/2 cups vegetable broth
  • Two medium size russet potatoes and one large sweet potato (together they should yield 4 cups or so)
  • 1 package of vegan Chorizo (I used this kind by Tofurky)
  • 1 large yellow onion
  • 2 cups baby portabello mushrooms
  • A pinch of Himalayan pink salt and pepper

Optional* I used a vegan egg to have with my chorizo and added fresh avocado and arugula. Add whatever you desire and make your own perfect setup!✨

If you haven’t tried the vegan egg by the brand Follow Your Heart, I HIGHLY recommend it! The link above is the best place online to purchase, but if you can find it somewhere in your area that would be better. I’m not going to lie, it’s expensive, but completely worth it if you want to replace eggs every now and then.

Cut all of the potatoes into cubes and put them in a large bowl. Sprinkle with a pinch of salt and pepper and set them aside.

Heat up a large nonstick saucepan on medium-high heat and add 1/2 cup of vegetable broth. Chop up the mushrooms and onions and add them to the pan, stirring every few minutes. Add a pinch of salt and pepper if desired. The mushrooms and onions will absorb the broth and start to brown a little on the bottom of the pan, so continue to add broth 1/2 cup at a time to prevent any burning. Once the mushrooms are soft and onions are completely translucent and lightly browned, you can turn down the heat to medium.

With the pan turned down to medium, add the potato chunks and chorizo, and stir well to combine. Continue stirring on medium heat for about 3 to 5 minutes, letting the potatoes get a little charred. Then turn the heat down to medium-low and cover the pan for up to 10-15 minutes. Watch the pan and stir as needed to speed up the cooking. Once the potatoes are your desired tenderness, you can remove the pan from the heat and serve it up!
